What Peasant Bakery Reveals about a Different Relationship with Living Things
Ce que la boulangerie paysanne révèle d’un autre rapport au vivant

Based on an ethnographic investigation, interviews and biographical trajectories, this paper aims to explore the current (re)composition of baking activities, driven by peasant movements. Focusing on the use of sourdough, this text questions the transformations of technical arrangements as they are justified by the category of "living", a major element in the reconfiguration of baking practices. In addition to considerations on the practical realities experienced by bakers-peasants (corporal commitments, processes), these changes lead us to question their relationships with the different materialities that inhabit their bakeries (tools, animate entities).
À partir d’une enquête ethnographique, d’entretiens et de récits de vie, cet article propose d’explorer la (re)composition contemporaine des activités boulangères, impulsée depuis les luttes paysannes. À partir de l’usage du levain, ce texte interroge les transformations des agencements techniques telles qu’elles sont justifiées par la notion de « vivant », élément prépondérant dans la reconfiguration des activités boulangères. Outre des réflexions sur les réalités pratiques éprouvées par les boulanger·ères-paysan·nes (engagements corporels, techniques), ces changements nous amènent à questionner leurs rapports avec les différentes matérialités qui peuplent leurs fournils (outils, entités animées).
