Emotions toward food processing: social and political issues

Résumé

In contemporary French society, so-called "processed" foods arouse numerous reactions: concerns, doubts, anger... (Lepiller, 2012). By combining the sociology of food (Fischler, 1990; Poulain, 2002) and the sociology of emotions (Hochschild, 1983; Bernard, 2017), this research analyzes the social construction of emotions related to different food transformations and their ideological dimension. How are these emotions toward food processing socially constructed? In what extent do these emotions also have a political dimension? To study the social construction of these emotions, ethnographic data has been collected through semi-structured interviews, observations of meals at home, observations of meals filmed in an experimental restaurant, and focus groups around video clips extracted from those filmed meals. Food emotions are partly acquired during emotional socialization, their expression is modulated by the ongoing situation, and they are revised through lived experiences. By presenting a typology of emotional eater profiles, this research demonstrates that these emotions are linked to social norms, as well as to the eater's representations of "industrial" foods. Expressing fear, anger, pleasure, or disgust toward these foods is a way of connecting with others, marking one's belonging or opposition to a group, but also to express moral and ideological values and to communicate political convictions. For example, feeling and expressing anger or disgust can be a way of criticizing the agri-food system, globalization, overconsumption, capitalism, or to take a stand on environmental and social issues. On the other hand, the expression of pleasure for these foods can be seen as a reaction to the prevailing moralization of eating behavior. These emotions take on a political dimension due to the underlying claims and social demands at stake.
